Haggis Pizza

Burn’s night came and went so the haggis went unused. I’m the only one in my house who likes it so I needed to wait for the right opportunity.
I was going to use it to make some of the excellent haggis balls that Mike did, but after getting the pizza oven, I had a flash of inspiration: haggis on a pizza.

Now I can’t claim all the credit for this one, the final recipe was after a collective effort from the whole club on how to make this as good as it could be.

The result was epic and as a result of me being the only person that likes haggis in the Smith household, I didn’t have to share it either. Win win!!!

Note, this recipe does assume that you have your favourite pizza dough ready to roll, or stretch or however you like to do it!
It also assumes that you have a hot oven of some form ready to receive the uncooked pizza.

Step 1 - Haggis

  • Make sure your haggis is cooked as per instructions and cooled off to the point where you can break it up with your fingers.


Step 2 - The base sauce

  • Get the best whole tinned tomatoes or passata that you can (or make your own) .

  • Add to a blender (if using tinned tomatoes).

  • Blitz/mix up with lashings of Worcestershire sauce.

Step 3 - Potatoes

  • Peel and dices up a potato.

  • Blanch in salted boiling water for 3 minutes then drain.

  • Heat up a frying pan, put a splash of oil and loads of butter then saute the potatoes in it until starting to crisp up. Don’t overcook them here though.

  • Put on a cold plate when done to cool off.

Step 4 - Assemble

  • Roll out your pizza dough as you like it. Make sure it is on an oven-ready pizza tray or a well-floured pizza stone.

  • Add a good helping of the tomato base and spread around.

  • Sprinkle some grated mozzarella (don’t go with the nice balls for this pizza).

  • Add plenty of your haggis, crumbled all over it.

  • Distribute the diced potatoes all over.

  • Finally, crack an egg in the middle.

  • Cook it in your oven of choice and then wonder how you survived this long without having had haggis pizza in your life!

  • Haggis

  • Pizza dough

  • Passata or a tin of chopped tomatoes

  • Worcestershire sauce

  • 1 potato like a Maris Piper

  • Butter

  • Olive oil

  • Grated mozzarella

  • 1 egg

  • Flour for dusting
