Salt n Pepper Chips

It’s been a busy few months and I’ve not posted for a while, though I have been enjoying the fruits of my fellow clubbers labour.
This weekend, I was finally in a position to get back into the kitchen and get cooking again which was ace.

So what better way to christen the new kitchen than something very simple but effective.
Salt and pepper chips!

Now, this is a new thing for me, I was only introduced to them back in August when we came out of lockdown, and appears that I’ve been missing out for some years. I am not sure how these managed to pass me by all this time. Having sampled these delights from a takeaway in my new manor, I had to recreate at home.

This really is winning all the way to the plate and I recommend that you get in on the action.

Now I used my chipper to make some uniform fries rather than my usual thicker cut preference and went all in to triple cook them.

If you are in a rush, some oven chips will still scratch the itch. They went as an excellent side to my Piri Piri chook
 

Step 1 - Prep your mix

  • Finely dice your chillies and spring onion into a bowl

  • Add as much crushed garlic as you dare

  • Grind in a generous helping of pepper, I like a lot (it is in the name)

  • Add a couple of pinches of coarse salt, again, don’t be shy here

  • Finally, add a splash of vinegar. Any will do but I had some pickled onion vinegar to hand so I used that

  • Give it a decent stir, add a bit more salt and pepper if you fancy and let it sit and marinate


 

Step 2 - Cook some chips


Step 3 - Make something awesome

  • With your chips still hot, put them in a bowl

  • Add the mix

  • Give it a good mix so it’s all well coated

  • Serve
